INGREDIENTS
  • 1/5 pound potatoes
  • 1/2 teaspoon salt
  • 1/2 cup finely chopped onion
  • 1 large egg lightly beaten
  • 1/2 cup olive oil
  • sour cream and applesauce
COOK PREPARATION
  1. peel potatoes and coarsely grate by hand transferring to a laegge bowl of cold water as grated   soak potatoes 1 to 3 min. after last batch is added to water then drain well in a colander
  2. spread grated patatoes and onion on a kitchen towel and roll up jelly style. twist towel tightly to wring out as much liquid as possible. transfer potato mixture ta a bowl and stir in egg and salt. 
  3. heat 1/5 cup oil in a 10-inch nonstick skillet over moderately high heat until hot but not smoking. 
  4. working in batches of 5 latkes, spoon 3 tablespoon potato mixre par latke into skillet, spreading into 4 inch round with a fork. 
  5. reduce heat to moderate and cook until undersides are browned , about 5 min. turn latkes over and cook until undersides are browned about 5 minutes more. transfer to paper to wels to drain and season with salt. add more oil to skillet as needed.
  6. keep latkes warn on a wire rack set in a shallow baking pan in oven.
